I have a TH/PP and i want to know how can i play oly with a class and, how i can choose one of my class to play oly... for exeple if i want to play how Hierophant how can i do it? and to read my name in oly ranking how can i do it?

I think it matters what server you play. Anyway, on the regular servers like Dragon/Nightmare, you just switch to your MAIN class .. so the class you started your character in. Unless it's mutant, you can just join Olympiad (IF you have finished the Noblesse quest). You'll join as TH and you will be able to use your Prophet sub.
